Moisture content and water activity are similar properties, but they have very different implications on the stability of your product. Moisture Content is the measurement of how much water is contained in a particular substance or material. This measurement is straight forward and is directly related to the hydration of the product.
Water activity is the measurement of available or free water in that substance or material. In most products, this measurement is directly impacted by the temperature of the product. A high-water activity indicates that the product has an elevated amount of water available, which will tend to support mold and fungal growth. This information can aid in determining storage conditions for raw materials and products.
